Cane molasses is the thick, dark, syrupy byproduct left over after raw sugar cane is crushed and boiled to extract sugar crystals. While table sugar is stripped of virtually all nutrients during processing, the molasses left behind actually retains a high concentration of the sugarcane plant’s original vitamins and minerals

  1. Light Molasses (First Boiling):

This comes from the very first boiling of the sugarcane juice. It has the highest sugar content, the mildest flavor, and a lighter amber color. It is most commonly used in baking and as a pancake syrup.
